Olive Oil Pearls

Olive Oil Pearls are simple to make and they create an amazing splash of color and flavor to your dish. 

Ingredients:

 

  • 2/3 cup olive oil (extra virgin for the best flavor)

  • 1 small packet (1.5-2 g) of agar-agar powder

  • A separate glass of olive oil, chilled in the freezer for at least 30 minutes

 

Directions:

Start by chilling a tall glass of olive oil in the freezer for at least 30 minutes — it needs to be very cold so the drops will solidify quickly. Meanwhile, pour 2/3 cup of olive oil into a small saucepan, stir in the agar-agar powder, and heat gently over medium heat until it just comes to a boil, stirring constantly so the agar dissolves; then take it off the heat and let it cool just enough to handle. Using a dropper or syringe, drip the warm olive-oil mixture into the chilled oil — the cold will set each drop into a smooth little pearl as it sinks. When you’re done, scoop the pearls out with a slotted spoon or strainer and rinse them in a bowl of cold water to remove any slippery residue.
